Cabernet Sauvignon & Merlot

Cabernet Sauvignon is probably the most famous variety of red wine in the world. Originally from Bordeaux, Cabernet has successfully spread to almost every wine-growing country in the world. The wine is dry, dark red with a nice and highly expressed scent that reminds of black currant. The wine is recognisable by its full, dry and extremely harmonious taste. It fits well with dark meat, more intense venison, mushrooms, cannelloni, lasagna and aromatic cheeses.

Merlot is originally a French variety from the surrounding area of Bordeaux Vineyards, which also spread all over the world. This is young, lively wine of ruby colour with purple reflection. It is dry and soft in the mouth and well-balanced. Recommended with red meat, oily fish, Croatian "Buzara" style shrimps, Istrian dry-cured ham.

Teran & Shiraz

Teran is an old Istrian sort and produces red wine which is distinctively refreshing, lighter in complexity, and its flavour offering distinguished tannins which sometimes give it astringent taste. Teran best fits with Istrian prosciutto, lamb and in general with warm roasts, steak of Istrian ox ‘Boškarin’, venison and mature sheep-milk cheese with truffles. There are accounts of Teran are dating back to ancient Roman times, stating that the mother of Emperor Claudius lived to a very old age thanks to the wine produced from this variety.

Syrah, a variety originating from the Middle East, although for a long time neglected in the vineyards, is today cultivated with a lot of success in some of the most significant wine regions of the world. Some of the greatest wines today are made of or include Syrah. Syrah is enjoyed best with soft cheeses, beefsteaks, grilled meats, especially lamb chops or fish stew and roast beef and greasy brudet.
